All the vineyards (12 hectares) are situated around the cellar, on its own property, between the Sarca river and San Siro hills with exceptional exposure to sunlight.
The oldest vineyards are still cultivated using the traditional “Pergola Trentina” method; the most recent ones are planted with the gouyot system.
The Pisonis were one of the first producers to experiment biological production with a double aim: firstly to respect the enviroment and secondly to produce a more genuine product.

In the newly built cellar the grapes are softly pressed and the must ferments under controlled temperature.
After fermentation special wines, like Sarica, Rebo and Pinot Noir, age in oak barriques for 12 months, which produces a stable structure, intense colour and unique bouquet.
Once bottled the white wines are stored in the cellar for a period of 2/3 months and the red ones for 6/12months.
